Y GLYCINE MAX CUBIERTO CON CHOCOLATE Alejandro, Barragán Ocaña; Luis Rene, Santos Rubio; José Armando, Esquivel Garrido Teniendo como referencia las características nutricionales de la barra de amaranto con miel, se procedió a potenciar sus propiedades nuctricionales mediante la fortificación de dos elementos más, la harina de Sphenarium purpurascens Sh. y Glycine max, que en forma complementaria ayuda a fortalecer el contenido proteínico de la barra de amaranto y chocolate. Lo anterior fue demostrado mediante la elaboración de los respectivos estudios bromatológicos, llevados a cabo por el Laboratorio de Análisis Químicos para Alimentos del Departamento de Nutrición Animal y Bioquímica de la Facultad de Medicina Veterinaria y Zootecnia de la UNAM, los cuales se muestran a continuación en las tablas 1 y 2.
